Ok... I'm 5 days into learning how to carve and I've made enough progress to ride the board like a soft boot board :D
But I haven't tried the norm and am gonna when I can get back on the mountain but I am wondering, I bought a all mountain board so I could surf the mountain too, but I wonder if its going to really make a difference in how the carve is going to feel compared to that of a racing board.

IMHO no, or at least not enough to be concerned with. I ride an axis and a renn tiger, other then the binding angles I ride em the same, and they both lay down some nice carves. :D

IMHO, the big jump happens between an all-mountain freeride board and an all-mountain alpine board. For example, my Donek Axis is much, much more similar in terms of carving to my Coiler PR and my Donek FC than to any freeride board.
