Ride height

Anyone have any general thoughts they'd like to share on ride height, and the implications of a "tall" vs. "short" binding? I'm switching to plates, and I think I want a short binding height, on the principle that it will be less "twitchy" than tall. Why not?

Also, can anyone compare the heights of the TD2 vs. Catek plates? From pictures it appears that the Cateks are quite high ...

I ride both plates, TD2 SI and Catek Olympic short plates, all ridden flat, there is (almost) no difference between them about their height. Not that I can see/notice.
